I have experimented and confirmed the teaching that no one can hurt me and no one can make me happy. I create hurt and happiness. This being true, why would negative vibrations in food, drink, people and environment have an effect on me. In my opinion they should not because I am the creator of all that affects me.

Now, answer to your question is derived from a wider understand of the law of nature. In simple words, it goes like this:
Meaning: If you live in the company of a wise person, you also will become wise. And the same goes for the oppositve.
When you eat or drink something with negative vibration, where does that food go? In your stomach, and it stays there fr a long time, isn't it? So that food, which is made up of energy or vibrations is your closest company, isn't it?
In this way, what we intake as food does stay within our body as our closest physical companion, and thus it does affect and shape the quality of our thoughts.
Further Understanding
Second insight is: It does not count in your bad or wrong karma, as long as you do not do an action with a bad intention. So 'intention' does matter. I am talking about people who eat non-veg food which is nothing but dead animals, to say the least. So they indirectly promote the killing of innocent animals, isn't it? Well yes, but they does not necessarily 'intend' to harm those animals. Thus it is not their fault.
Concluding, if your aim of life is high, it is self-realisation, it is to attain spiritual wisdom and most of all, to live a happy, healthy, and peaceful life, then you must stay with pure vegetarian or vegan lifestyle. That is good is all ways.
